CHAPTER 7:

Dinner Recipes

Crunchy Fried Chicken

Preparation Time: 50 minutes

Cooking Time: 45 minutes

Servings: 4

Ingredients:

One-fourth tsp. salt

One/eight tsp. dry mustard seasoning

One-half tsp. cayenne pepper

Two oz. cornmeal

One-half tsp. paprika seasoning

Two oz. cornflakes, crumbled

Four chicken breasts, boneless and skinless

Two tbsp. whole wheat flour

Olive oil cooking spray

Two oz. buttermilk, low-fat

One tsp. garlic powder

Directions:

Set the stove to heat at 375° Fahrenheit. Apply a coat of olive oil spray over a 9-inch glass baking dish.

Empty the buttermilk into a glass dish.

In an additional dish, blend the cornflakes, cornmeal, and flour with a whisk to integrate.

Season with the mustard, cayenne pepper, paprika, garlic powder, and salt and combine fully.

Immerse one chicken breast first in the buttermilk and then into the cornflakes to completely cover the meat. Make sure the chicken is not dripping by removing any excess batter.

Transfer the coated chicken to the prepped baking dish.

Repeat steps 5 and 6 for the remaining chicken.

Apply the olive oil spray to the chicken and heat in the stove for half an hour.

Remove and enjoy immediately while hot.
